At our farm, we do annual honey harvests that have become a family tradition. Every step of the process is done by hand.
Our honey is raw and unfiltered. This preserves the natural enzymes and delicate nuanced flavors that are lost when honey is heated. We only use a stainless steel colander to strain the honey during the extraction process. This allows small amounts of pollen to remain in the honey. Eating local, raw, unfiltered honey helps with seasonal allergies to local pollens.
Raw, unfiltered honey crystallizes faster than processed honey. This is a natural process and is a sign of quality honey.
It has no negative effects, and it preserves the flavor and quality characteristics. Honey can be enjoyed crystallized, or it can be returned to its liquid form by placing the bottle in a warm water bath.
